Maple Syrup Time

I had a forester mark the best trees so we always test above 3.0% vs. the area which average 2.0. sap will get cloudy soon and it will be over.

I take it you are tapping hard maple only.

Finished cooking down my last batch, it sat longer so this batch was darker in color but tastes great.
