Almost dinner...

Finally caught the little bastard thats been sneaking around the new orchard. Took 3 sneaks with the bow, 1 shortriffle miss, and finally a handful of freshly dropped locust pods in a live/trap to get him. Set my Virginas Hewyes Crab back a good year.

Will edit with a few crockpot pics for closure.

A repeat, but it's been 2 years since I made the walleye chowder. Time flies. I tripled the size of the recipe, which means it now called for 6 walleye fillets. So I used 20.

Brown sugar dry rub
4 hours in the oven on 220
Added a quartered apple halfway through for moisture.
Finished on charcoal an cherry chips.

That looks awesome. Can you get deer ribs to fall off the bone or not? I've never tried them.
 
Fall off for sure. Sometimes they get to far (roastbeef/shred). I like them with just a little bit of bite/chew better.

We do deer ribs too...they are AWESOME!

Next year I'm going to cut up some ribs with loin like Rack of Lamb and see how that turns out.
 
The recipe I've been using is linked to back on post #403 page 21. Several of the following posts have members sharing good tips.

Smoked chicken leg quarters. A little AP rub followed by Killer Hogs The BBQ rub. 350 degrees indirect heat for a little over an hour. We threw in some roasted baby potatoes, mushrooms and garlic bread. We had a nice fire to eat by too.

Born & bread in PBR country ... my mom & dad owned a bar & restaurant that had PBR on tap. My starter drink these days is good vodka on ice.

I love beer; however as I have gotten older, Gout has shown up. Went on a great dark beer kick last fall and if you have ever had Gout, found religion :emoji_astonished:

Wife & I have made our "next" drink after a tini to be WhiteClaw.

Will drink beer with you sir any time ... :emoji_wink:
 
I prefer a nice red wine myself. Tonight was baby back ribs. I’ve been a Weber kettle fan for almost 40 years but I’m really loving my Kamado Joe. It’s a cooking machine.

Deer burgers on the gas grill tonight. Slider sized with Pepperidge Farm sweet Hawaiian slider buns. Like mixing in Lipton soup mix packets sometimes. Tonight's flavors are mushroom and onion, and beefy onion.

Had a glass of white wine, pinot gris. (Not what I drink at deer camp). Having a Saint Archer Gold now. You light beer drinkers try it yet? Only 95 cals but more flavor than most other lights. Could definitely crush a couple of these out on the summer fishing boat.

I am a beer drinker and I have never counted "cals" ... I usually count the number of bottle caps in front of me. When I can create a circle with the bottle caps with one cap in the center without touching the other caps, its the start of a good night :emoji_wink:
