What's for dinner?

I usually buy a whole beef tenderloin for Xmas dinner I haven’t priced them yet this year you guys are making me a little nervous about sticker shock
 
Last whole choice tenderloin I bought a few weeks ago was $14.99 # and it was trimmed. The following week they had whole untrimmed primes on sale for $17.99 #. My wife and daughter wouldn't know the difference between the two.

You just buy it and don't worry about the price. Can't give up your tradition. I have never bought a whole beef tenderloin, but I suppose that's the next logical step for me.


How do you cook yours?? I'd like to get one for some really special occasion. I look at them every time I go to Costco. Much easier to find prime grade tenderloin than prime grade ribeye where I shop.

That is exactly how I like my ribeye! I want the full beef flavor. Do you slice your tenderloins into steaks or just cook the whole lion as one big piece? I feel like I could eat a whole tenderloin by myself if its really good.

We have got a whole beef tenderloin for Christmas several times. Always cooked it as 1 piece and then cut steaks after. People who want medium can have an end piece. Rare from the center.

How do beef ribs taste compared to pork ribs? Just last night my youngest son was asking me why we eat pork ribs but not beef. I didn't really have an answer for him, so that makes me want to try beef ribs.

Beef ribs are incredible. Rich beef flavor. Very tender if you do them right. I made a slab a couple weeks ago. Found them in the freezer, but price tag says it was bought on sale at a good price.

Seasoned and wrapped in foil, in the oven til tender, I think about 2 or 3 hours. Foil off and a couple minutes under the broiler. Baked potato and salad as sides.
 
It all turned out good. Nice ring but not overwhelmingly smoky. Super tender and flavorful.

Beef ribs taste a lot like brisket the way I do it.

Mom made some bread. Fried with butter and topped with brisket or ribs is darn good!
