What's for dinner?

I tried something last evening with some fresh green beans I got from a local farm stand. I put some extra-virgin olive oil and butter into a skillet & melted the butter - enough to cover the bottom of it. I cut the beans into thirds for easy eating. I sauteed them (over low-medium heat) with about 1 tsp. granulated garlic and a few shakes of salt & pepper until they were just starting to soften a bit - leaving a bit of firmness in them. My wife loved them, and they were pretty darn good. No recipe - just an experiment. Simple & quick. We'll be making them again this weekend with a fresh batch of green beans.

I also tried sprinkling a little grated Locatelli cheese on them after cooking = really good eating.
 
Tile fish in a cast iron pan. Some with a hint of blackening seasoning and some with Italian herbs. Yellow rice on the side.

Never tried tile fish. How are they? Looking at the flesh, it reminds me of mahi mahi.

Funny. What runs on the plate after it’s cooked tells a story. Last few were good stories.

A few weeks ago....Sandbur was fishing on Gulll Lake where I live. Evidently he got lucky...and caught a few nice walleye that day. He was not too far from my home when he called me to drop-off some fish. Art...being the guy he is....tied onto my dock....whipped out his fillet board....cleaned some beautiful eater-size walleye.....puts them in a bag....wraps the remains in paper.....and gives me those fillets. Then we had coffee on my patio. I had to freeze the fish....as my wife was not doing to well at that time....and the next day we went to the ER in Minneapolis where she spent a few days to determine the next thing in her care.

Then with my wife on the mend, lots of life got in the way. We bought a down-size home, listed our place here on the lake, had a great, grand baby reveal party, and a G Granddaughter birthday party....and sold our home here on the lake. Pandaemonium. Whirl-wind times. The dust has settled a bit....but still crazy.

Well, tonight we finally had a beautiful walleye fish fry. My wife makes a nice panko coating with some eggs and salt and pepper. Bush's beans and little potatoes. Super dinner. THANK YOU ART....for being the friend you are and a genuine, all-around nice guy. Proud to call you my freind. Best!

Looks delicious!! I hope your wife is doing better. And - not surprised about Art being a super gentleman. He's shared his knowledge & fruit tree seeds with me / our hunting camp. Art's known to fish a little ......... 😲 😉

My wife is doing pretty good right now. Don’t get sucked in by Sandbur. At his core he still made off with all the rain dance money I earned back in the day and drank up all the profits. Dont trust him I say. Wink / grin. 😄
