What's for dinner?

Ah I see. Never heard of that technique before.
Google "velveting beef" and give it a try sometime. I'm curious to see what other's opinion on it are. I'll certainly try it again, especially on deer since my only effort so far was with beef.
 
I'll try it on some deer. I don't eat much beef here because of the price. Sounds interesting.
 
Well it's that time of the year when the wife likes to bake and make treats. She makes English Toffee every year. My only contribution was as a taste tester.

I exchanged acorns for elk meat with angus1895. Finally got around to making the meat he gave me for Christmas eve. It couldn't have possibly turned out any better. I cooked it on my pellet grill between 200-225. Some of the most delicious meat I have ever eaten. My first time ever eating elk steak or roast. Not sure what cut it was, but it was awesome.

Elk is by far better than beef IMO. That look good!
 
I grilled a rack of lamb last night. Twice baked potatoes and asparagus. It was a great meal - then we got a phone call and spent the night in the hospital. Our oldest went ice skating, got his toe stuck in the ice and fell and earned a displaced fracture of the fibula. I won’t post a picture of that. IMG_2043.jpeg
 
Rack of lamb is one of my absolute favorites. Looks awesome.
 
Celebrated Christmas tonight with our family. The grilled venison went quicker than the steak!

Sautéed veggies, toasted bread, smeared on some horseradish, melted cheese, and topped with crushed dried Wasabi peas. It's a hit! It's the youngest kids deer, he loves to brine deer.

Last weekend I took a big deer roast, cut into thirds and corned it. Today I rinsed it from the brine, cooked it at 200 for 6hrs, then shredded it.

Good lord what part of the deer is that? I've never seen fat marbling like that on a deer roast before.

Lol, I don't know what roast it was. It was the biggest package of deer we had in the freezer and it was just labeled "deer roast". I had guessed it was a de-boned leg due to all the different muscle groups, but I didn't pay close enough attention to figure it out.
