^^^ Jealous!!!

Beef shanks?

Nice! I save all the shanks from my deer as well. I have a few big red stag shanks I need to eat this winter.

My first time with elk. I’ve cooked a lot of deer shanks. For years they ended up in burger until I discovered the way…

I made some of my daughter's fish for supper the other night. We kept one mid sized bass and her big crappie for some baked fish. I get all my fish dried off with paper towels before I ever season them. The baked fish I gave some lemon pepper, pink salt, and a touch of garlic powder with a little butter in tinfoil. The other fish I just season with lawry season salt and some paprika. I cook it with a little avocado oil on medium heat. It was all excellent. Most of our fish came from lakes with 0 houses on the shorelines. About as good as it gets.

That looks great!

I need to learn to bake fish, likely healthier than when I fry it.

Why significant that they come from lakes with no houses?

Pollution.

Lawn chemicals, detergents, engine exhaust, animal waste, grey water, sewage, etc.

I dont like to eat fish from water where I live in southern MN. The lakes are lined with houses or fields and the water is often dirty and looks gross from all the various runoff. I prefer to get my fish from lakes in northern MN with water so clear that it looks like you could drink it without issue. No farms, sewers or fertilizer and pesticide runoff.

Baked fish is incredibly easy. I like to soak my fish in salt water in the fridge for a day or two. Take the fillets and rinse them off and then get them as dry as you can with paper towels. You cant over dry them. The drier the better. Then place the dried fillets into the tinfoil skin side down. Season however you like. For me its pink salt, lemon pepper and a touch of garlic powder. Then a little butter on top. Wrap tightly in the tinfoil so moisture cant escape. Cook in the oven at 350 for 20-30 mins depending on thickness of the fish. Then enjoy. You could add lemon juice, mushrooms, onions, etc.... Its actually pretty hard to screw up. Quite healthy and very very quick and easy. Exponentially healthier than when you fry it. You can eat a lot of baked fish before you feel full.

The pollution thing makes sense. We don't have to worry about human pollution in our ponds, but the watersheds are cattle pasture so there's plenty of "fertility" dumping into them. Creeks surrounded by farmground so synthetic fert and lots of chemicals wash in.

Thanks for the recipe BuckSutherland!

Well I started doing cold plunges. I went out in a lake here and layed down for a couple minutes. It was pretty neat but not so easy. I'll be doing it again tomorrow.

The experience made me crave some piping hot comfort food, so I made a pot of moose chili to warm me up this evening. Extra spicy so it gets the sweat going a bit. Nothing fancy, but Holy jeez does it hit the spot.

Got a plan for the plunges? Number of days a week? Minutes per plung?
I've never had moose before, but that chili looks good!

The goal is 4 to 5 times per week, 2 or 3 minutes each time.

I'm also doing sauna a few times a week. Haven't yet combined them, because the lake is not near the gym. But some day it would be cool to combine them I think.

Did you start with any particular influence with the cold plunges? Wim Hof is a very interesting source on this subject. I personally utilize showers for a simular affect. Shower water temperature is around 50*....this time of the year here in the midwest.

No Wim Hof stuff yet. Breathing is important to prevent hyperventilating. I just asked a friend of mine who used to do it, and he gave me some tips. He also said it did make him feel a bit better.

I guess you could say Joe Rogan brought it to my attention and then Huberman made me really consider it. I figured it's free, so why not give it a try.

It was excellent. Polished off the rest of the pot after my dip in the lake today. I browned the ground moose in bacon fat since the meat was so lean. I had to improvise with the spice blend since I can't find chili powder here. Turned out fantastic.

Cheers from under the ice!
