What's for dinner?

Shot a little forkhorn with my bow. Fresh deer loin on the grill, sautéed mushrooms with green beans, twice baked potato, and garlic bread. And a nice bottle of wine!

I have one for you guys to try....



Mix up some seasoning in a bowl that is about:

25-30% Lawry's season salt
25-30% black pepper
40-45-50% garlic powder.

Then put it in a shaker and cover all sides of a block (or blocks) of cream cheese. Throw the seasoned block(s) of cream cheese into a disposable pan. Cook on your pellet grill at 200-225 degrees for about 2 hours or until you build a nice golden bark. Don't put it over the burner, put it off the the side. Cook it uncovered. About 45 mins into your cook add a little can of diced jalapenos without the juices. Then get these pretzel crackers if you can find them or something similar and ENJOY!!!



I made 3 blocks for a Christmas party and it was a HUGE hit. Takes me less than 5 mins to prepare 3 blocks. I like to stagger my cooking time so they are not all done at the same time. They are much better when they are soft and warm. Guaranteed one of the tastiest appetizers you have ever had. Jalapenos are not mandatory for those that struggle with heat, but are an awesome addition if you like a little ass burn.


Might work in the oven as well. I do them on the pellet grill just because I have one.

I have done this before and love it. Get you some pepper jelly and pour it over the cream cheese after you smoke it. Kinda like what Bill had less the goat.
 
Christmas dinner -
Eye Round roast in a stainless rectangular foil-covered pan, with plenty of fresh onions & garlic cloves, covered in baby portabella shrooms, whole black peppercorns, rosemary & thyme. Done low & slow for about 7 hours in the oven, slicing it into 1" thick slices part way through to let the flavor get into all the meat. Fall apart tender!! Garlic mashers, green bean casserole, and baby carrots glazed with a mix of brown sugar, Dijon mustard, butter, and ground ginger. The broth from the roaster made a crazy-tasty gravy for over the mashers. Cleaned the plate of gravy with dinner rolls.
 
My Christmas dinner:
This years bucks Inner tenderloins wrapped in bacon and baked in my wife's homemade creamy mushroom sauce
Garden mashed potatoes
Garden asparagus roasted
Strawberry salad with cranberries, nuts, etc
Key lime pie

Man, can my wife cook; and nearly everything is made from scratch.
 
That looks great, what kind of ribs are those?
 
Tomahawks from this yrs deer. Cooked to 124 in the oven then seared in a hot cast iron skillet. Awfully good!
Dang, I really wanted to try that this year, but chickened out. Those look awesome!
 
My wife said I needed to eat healthier now that I am older so I had a salad tonight.

That's a damn good looking salad!
