WHAT HAPPEN IS YOU SRPAY DORMANT OIL TOO LATE?

I have always heard that you have to spray dormant oil before buds break. Then while researching a recipe this spring I found one that used Canola oil and a lot of the articles said you can spray after bud break. So what happens if you spray too late? I have a good guess, but do not know the answer.
