I always try to leave the hearts on when field dressing. Best part.
Dove hearts and gizzards are must saves! Role in flour and fry in some butter and they are great.

One cut in the middle (very shallow so that you don't get into the pouch), fold in half, then role the pouch out. Super quick and easy. No mess.How do you get the lining and grit out of those tiny little gizzards?
