What's for dinner?

I do a recipe like that for myself. It's basically venison carpaccio. I salt the backstrap and leave it for an hour or so to draw in the salt. Then I coat it liberally with black pepper and sear it on all sides. Done.

I slice it as thin as possible and eat it with maybe a drop of soy vinaigrette, or maybe just as-is with a cold glass of lager.

So, I always eat an unsafe amount of completely raw venison as I butcher a deer. By the end of my butchering (especially with buddies around) there is usually a bottle of bourbon, lime wedges, flake salt and soy sauce at a minimum. Sliced thin and dressed in some way.
 
Not one-upping, Cat - but anyone ever try onions, fresh or sauteed, on a grilled cheese sammy? The pepper idea is one I'll try myself!!!! 👍
I might be trying the sauteed onions now that you bring it up. I bet that's great!

Be selective. I would t go for anything that had contact with the gut job, even if it was a perfect one. I do eye of round and there is this little muscle I think on the inside of the shoulder. Not the flat iron, but a perfectly round little muscle on the inside. Slice thin across the grain, drizzle with a little soy, and enjoy.

Quartered a couple bunnies, marinated them in zesty Italian in the fridge a couple days.
Wrapped them in foil, baked low and slow.
Then finished them on the grill with BBG sauce.

Fall off the bone eating!

Any Clint western movie is OK by me. Fistful of Dollars, For a Few Dollars More, Josie Wales, The Good - The Bad - and The Ugly, High Plains Drifter, etc. Our sons loved them while they were growing up. We have the VHS and DVD formats. Lots of popcorn & pizzas were scarfed down while watching!!!

Rabbit, venison medallions, crawfish boil, venison shanks ..... I'm hungry, boys!
