I don't know personally, but friend of mine has planted spruce and persimmon in Iowa and both have survived. MO if I were you I would look at the Swamp Bur Oak hybrid from Kelly Tree Farm in Iowa. That tree grows fast/healthy even in MN, my guess is that it would drop nice sized acorns in 10-12 years in Missouri.
 
I have lots of native persimmons on my place in central mo and they grow great close together. I would think 6 to 10 ft would be fine... My research says no need to tube them. I have planted many Norway spruce for my landscaping costumers. I wouldn't think they would need protection either. I know north mo gets a little colder but I think you should be good
