What's for dinner?

Looks amazing! And when you’re done you can take your smoker down the trails at Moab
Lol, I put that cart together after 1 time too many of lugging the smoker around by hand. It's really pretty nice and has spots to put food and trays. Works out well.

I bought some new non stick pans (green pan). So far so good. Last night I made my last bag of fish in the freezer (crappies) . My new favorite recipe is just a little pink salt and then paprika. Then I fry them on medium heat in a little avocado oil. The sliced mushrooms also get cooked in a bit of avocado oil with a bit of pink salt. Spectacular way to fry up a couple panfish for yourself. Very little stink, and not such a bloated feeling from deep frying them. I could eat a whole platter by myself. Fry them skin side down until they are cooked all the way through before you try to flip them. Keeps them from curling and holds them together.

May have to try that! Looks great!

Was in Cairo, Egypt for 10 days cruising the Nile and seeing all the great sights. One of our meals was table top slow roasted lamb, chicken, & vegetables. Grilling is a way of life there. The pita bread, called eish baladi, went well with the dipping sauces ... lots of garlic, herbs, sour cream, humus.

Scallops are awesome. What's the food safety authority?

It would be similar to the FDA, but specifically for food regulations and food safety. They have a service to test wild shellfish and mushrooms for public safety.

What would cause the shellfish or mushrooms to be unsafe to eat?

I know that some bodies of water here are impaired from pollution and you are only supposed to eat one meal per month depending on species. I've never heard of any issues with mushrooms though, assuming you pick the right species of mushrooms and cook them appropriately.

The shellfish can have neurotoxins from certain types of algae.

The mushroom issues are mostly just idiots picking the wrong types and dying. We have death cap, destroying angel, and deadly webcap, for example. Newbies and Asians tend to get into trouble by misidentifying mushrooms or grabbing a deadly one while picking a cluster of edible mushrooms. There are over 50 varieties of poisonous mushrooms here, plus dozens of edible types.

Natural selection will weed out the mushroom foragers with poor mushroom ID skills!
