Did you use borax? I’ve done a lot of turkey fans with great success that way.

I have boric acid, so that's what I used. I hope it's good enough.
 
They have the really gray coloration up there. Sharp looking birds.
 
Ordinary table salt?

Yes, I do. It dehydrates the flesh and kills bacteria that would cause rot. Taxidermy people typically recommend drying with non-iodized salt, but that's due to price and possible discoloration. I don't worry about color on a fan since it gets covered.

I put the fan on a piece of cardboard or sheetrock. Pin the feathers into the shape I want. Pour salt all over the flesh I couldn't get off. Shake the salt off every couple of days and put fresh on. Seems to work well.
 
I use duct tape on the back of grouse fans to hold the feathers in place when the meat/tail section eventually rots away and no longer holds the feathers securely in place. I have a couple dozen grouse fans on the wall of my cabin and it is pretty cool to look at the different color phases for both the grey and red phase birds.
