Has anyone tried these with acorns or other seedlings that are stated inside during the winter? Or for grafts that will spend part of the season inside.

Tractor Supply is going to be carrying them and their website mentions air pruning occurs through the pot. The only problem I see is that they break down after 12 weeks.
 
I haven't used them for any of my seedlings, but growing up we always used to use them for garden veggies. They work well, but I wouldn't use them for root pruning. They're for sure a step up from plastic, because they can "breath". I wouldn't hesitate to use them on my ninebark or other shrubs or apples. Oaks and chestnuts I'd think twice about it.

One potential upside I see is that you'd be able to plant them in the ground. This is why they degrade in 12 weeks. So if you started your seeds in March, you could plant outdoors in May-June.
