Late Dropping Fruit Suggestions? Southern Middle TN

I am in zone 6A and these are late hangers for me;

Apples- Granny Smith, Gala, Galerina, Golden Russet, Arkansas Black...all hold some into early Dec.
Crabs- Golden Hornet, Droptine, Roadkill....will hold into deep winter.
Pears- Gilmer Christmas, Korean Giant, Kiefer...Gilmer Christmas will hold into deep winter the other two into early Dec.

I kinda thought blue pearmain was on for warmer climates. Variety is not discussed on here too often. I have 1 planted on a field edge where I hunt. Hopefully herbicide drift doesn't whack em. Made a whole year already.

A big apple issue is chill hours. There is a inhibitor hormone inside the apple tree. The more the winter goes along, the more this hormone is expelled from the tree. Once the hormone is pretty much gone, trree starts to blossom.

If winters get more mild, the trees with alot of chill hours might not blossom properly for you. century farms has some low chill hour trees. I use cummins nursery for descriptions of varieties, and they have alot of them. I put in usda zone 9 rubinette looked like the only late ripe tree. Ripe date can vary wildly from drop date. Look up dolgo, everbody says early septemeber. Then you see some dolgos holding all winter. But, a late ripe date usually mean its going to be atleast ok for fall.
