Grits and ethics

I made a trip to texas late last year and discovered real grits. I was hooked at the first bite. Now I have a question for you southern guys that live the grits lifestyle. Can I make grits ahead of time and bring them to camp and just add them to a dish and warm them up a day or two later? Would I lose a boat load of quality? I can certainly make them at camp, I'm just trying to cut out 30 minutes of tending them on a burner.

Or alternatively, If I could a combo over the grill, can I throw them in dry with everything and let them cook down with the whole mess?

Warmed up grits are perfectly acceptable.

You do need to make them separate though. Then combine them at end and eat. But don’t cook them in with other stuff.
 
We do it all the time. Add a little liquid (water, half&half, milk, etc) to it when heating it back up. They can get brick hard after set up.

Also, I'm not to proud to say, we keep a bunch of instant grits packets in the pantry for when we don't have the time to make the real thing. Add some shredded cheese to it at the end and stir it up, then put a fried egg on top.
 
Appreciate the feedback guys. I had shrimp and grits at Boudros on the riverwalk in San Antonio. That was outstanding. One letdown there, there wasn't a great taco place in downtown San Antonio.
 
These are real grits. Not always as good the second time, but as mentioned before, add liquid to smooth them out. I typically use whole milk and a little heavy cream if I reheat them.

My Geography professor said if you can go in a local restaurant and they have grits on the breakfast menu then you are below the Macy Dixie Line
