If the farmers in your immediate area have relatively new combines there really isn't much left in fields anymore unless a weather event busts things down. It happens but not often enough to count on.
Standing beans in the winter is something the deer won't get anywhere else around unless others are doing the same plots. Some fruit trees like your thinking will be something probably not around much in your area but they will take a few years to get a decent crop to be considered a draw.
