Pear honey time

Got off nights this morning and after a short nap I went on a pear hunt. There's an old tree next to the Mississippi River levee I usually get all I need.

We are picking pears now as well. What is your recipe?
We peel , core, then make into pear butter with cloves and cinnamon . As we have about a million love new ideas.
 
We use to make pear honey from the ancient pear tree in the in-laws yard.

Two weeks ago I had two small pear trees with about 15 pears each in the yard at my hunting land. Went back last weekend and none left but some broken branches. I suspect coons, but it might have been deer. No bears here.
 
Pear honey the way I make it is simple.
8 cups of shredded pears, I use a food processor.
8 cups of sugar.
This all goes in a good sized pot on medium heat. I stir mine pretty much the whole time cause if you scorch it, it's ruined.
The pear shreddings will become clear when you're getting there. I'll set my timer this time as a guess, but I cook till it thickens up the way I like it, the more time you cook the thicker it will be.
After you're happy with the thickness add one cup of crushed pineapple, I never asked why but I'm sure for the citric acid, and cook another 15 minutes.
Pack in pint jars and process in a boiling water bath 10 minutes.
Then cook up some homemade biscuits and enjoy summer in a jar!KINDLE_CAMERA_1470059784000.jpg

I have cinnamon before, but my bunch insists I add nothing now days.
