Heck yes, we eat a lot of it at our house. Some species are better than others for taste and it depends on what they have been eating, around here most are feeding in crop fields.
Canada geese are a lot like beef, meat is same look and texture and they eat the same food as a cow.

Took most of day for the birds to go out to feed due to the cold weather, but when they did it was pretty steady shooting.
