When to cut Scion wood

I am in zone 7a and was wondering when I should cut my scions. I am going to try bark grafting for the first time this spring. Can I cut the scion and bark graft it on the same day or should I cut and store it?

You can do it either way. I'd prefer to cut it while still dormant and store. Then graft once the trees wake up.
