What to do with aspen trees?

Agree with NT179 above. I've witnessed dry areas of needles under sufficiently large evergreens where deer bed in snowy weather. The boughs act like umbrellas and make for great bedding - especially on sunny slopes. For us here, white pines and hemlocks are the umbrellas, with some of our spruce that are now large enough.

The dark green patches inside the red circles are tight-growing white cedar / arborvitae.

I assumed the deer wouldoverwinter there, but they don't seem to.

Also, there seem to be two types of aspen. Are they equally valuable to wildlife?

Quaking aspen and bigtooth aspen have basically the same value to wildlife.
