I know it best to transplant trees when they are dormant, but having property 5hrs away and different zones is tuff. I have some renteeka crab, antovonka apple, and a pear that I want to dig out of garden and transplant on northern property. Will they be ok if the have started leafing out and I dig them up and transplant them?

I've done it with success. The key is too dig up as big a rootball as possible, leaving all of the soil intact on the roots.
