Start of Dormancy

I've got 40+ apple trees to move from my nursery to my orchard. I'll be digging up large chunks of soil to try and keep the rootballs happy. When are the trees officially dormant and ok to move?

When the last leaf has fallen off the tree? A couple weeks later? After lows have reached a certain temp?

Once the leaves start dropping off the individual trees (going to vary a bit by variety) you are safe to transplant. Some varieties will hold some leaves well into winter. Water them in well regardless of the soil and weather conditions.
