This is a different way - never seen this before but makes some sense .....

 
Very interesting. It is a little bit like T-budding, but with a live and rooted plant.
 
I don't understand why he wanted to do it that way. When I looked up the follow-up video, he left both rootstocks in place permanently. I'd have left the dwarf tree in a pot. Then he cut it off just below the graft and planted the dwarf somewhere else so I had 2 trees.
