Need Help - First Time Grafting

Good Afternoon,

Next year my goal is to graft some American Persimmon trees that I have. At this point they are too small to determine if they are male or female. I am interested in grafted scions to these trees from known female trees.

My primary question is how big (diameter) does the tree need to be before I can graft?
Also I plan to purchase some of these trees in one gallon pots. Can I graft to them while they are still potted?

Thank you Bill. I have read that I believe and I have done a lot of research on this site and others but I have not found the answer to my question. I may not be searching the right thing. I have read how to graft but not when a tree is large enough to graft.
