How do you tell when green apples getting ripe?

My Granny Smith. How do I tell when getting ripe?
 
Cut one open, check for brown seeds.
 
They should develop some blush on the sunny side, and will have lenticels too.
 
Bite one.
 
A good indication can be brown seeds and background color of the apple is different than the sun exposed side. Scientifically a starch Iodine test on the flesh to see how much sugar has been converted.
 
I prefer eating one to iodine testing!
 
To be honest their ripe when you like them! As an example I enjoy Liberty apples well before they are "ripe" all the way through their peak. Same for Arkansas Black.
