Giant puffball

Found some young giant puffballs that were fresh. Made mushroom parm, amazing!
 
How do you know if they are fresh or too mature to eat? I only had puffball once and it wasn't something I would try again.
 
Yes I tried them one time and they where bad nice clean white interior when sliced I thought hot diggity these are going to be good that was not the case for me at least they where pretty bad in fact. Maybe some trick to eating them I’m not privy to??
 
The puffball I tried tasted like an old stinky shoe.
 
I've sure tried to like them. Have tried multiple sizes and colors. I'm sure they were very fresh, they taste like dirt to me no matter how I cook them.
 
First time was horrible tasting about 3 years ago. But it was also pretty big and a little on the lighter side. This time I got them very young. Probably a little bigger than a baseball. Very firm and very clean, no bug holes. And very dense. Just cut off where they were attached to the ground.
 
Sliced about 1/2”-3/4”, Then cooked them real quick in butter and garlic, put them in the fridge, then flower, egg wash, panko breadcrumbs. Very very good.
