Could I graft scions to pear, and persimmon in January?

Dont make it back to northern MO till first of april. Supplier says that's to late in spring to ship pear scions. Would cause scions too come out of dormancy in shipping. Thinking would like to try grafting in the first of January next year.
 
Just put the scions in the fridge until Spring.

Dont have spare fridge without fruit at times. Have vacuum chamber sealer with extra thick bags. Do you think would be OK to keep gasses away from scions?
 
I think a couple of gallon ziplock bags would suffice. I've never had a problem.
 
Graft got to heal before it drys out. Even late febuary would be a dead duck here in NY. See the buds getting big or better yet mouse ear leaves, that when to do it.

Should be good if put in a fridge now till then. Not sure about pears, but you can T-bud in the summer on apple trees.

Got trees at home? Park some of them on your home trees, got plenty for next year.

Need to look into T bud.
 
You can chip bud also.

But I really wouldn't worry about ethylene causing scions to come out of dormancy. Use a few plastic bags, and you should be good.
