What type of tree/shrub is this?

5 year old buck +
I have these all over... they grow in clumps. They provided browse when they were smaller. Wondering what it is. To see if I should cut them back, hinge cut or let it go.

I may be way off and if I am I hope someone says so. But I see grey dogwood
 
I can't tell by the pics, dogwood have opposing branches, vs. alternating, if that helps.
 
I believe they are opposing branches. I think it’s grey dogwood. Do you guys have thoughts on if I should just cut tree trunks off at waist high or should I hinge cut these in a certain pattern? Most of the browse is too high for the deer to reach anymore.
