Espalier Trees

I'm going to plant about 6 or 8 trees using the espalier system here at the house. The top wire will be 8 feet high, so overall height of the trees will top out at 10 feet. What's a good rootstock around 10 feet that grows well in sandy soils?

Also, what varieties seem to be good at growing branches with 90 degree crotch angles?
 
Cortland a Liberty have good crotch angles. Trees with weak wood would be easily trained, like Nova Easygro, Richelieu. The problem is finding growth characteristics about most apple varieties. You have to find descriptions by the breaders not the nurseries.

Tip bearers are not good for espaliers because you do a lot of tip pruning.
TIP-BEARING APPLE VARIETIES: Cortland, Empire, Fuji, Golden Russet, Granny Smith, Lodi, Maiden’s Blush, Nova Spy, Paula Red, Redfree, Rome Red, Shizuka.
PARTIAL TIP-BEARERS: Ginger Gold, Gravenstein, Lodi, Northern Spy (I don't know why Lodi made both lists.).
