Grown out M111 rootstocks

Anyone know the fruiting characteristics of a grown out M111 rootstock?

Several years ago I grafted 100 of them. Had a few tops die back after moving to their permanent location and the rootstock resprout. Figured I'd let them get a little size then regraft. Fast forward to now...I let them go a little longer than expected, tags have deteriorated and blown away and I have a few cases where I can't tell if it's a grafted tree or grown out rootstock. I'd hate to graft to an already grafted tree as in some cases it's the only one I have of that variety. If the rootstock has decent wildlife value as a grow out tree, I'm inclined to just let them go.
 

Tree is 3/4's northern spy, you'll get a good idea what you'll have by looking up details of that variety.

merton 793 is 1/2 northern spy 1/2 mailing 2.

Will be suspectible to cedar apple rust. IF you think your graft is resistant and see rust, you probably have a mature m111. I have 11 m111 grafts this year. Looking like 2 or 3 aren't waking up yet. Will let one or two live at camp. Northern spy is zone 3, so it might have a chance.
