Grafting question

This was my first year grafting and now I'm addicted, question for all the experts. I bought an apple tree from wal mart 3 years ago. Not sure if it's dwarf or semi dwarf. I had it in a 5 gallon bucket for 2 years before I planted it at the farm. (Long story why it took so long) anyways. It hasn't died. But it also hasn't grown much. The trunk is getting thicker and it might have put on 1 ft in the year it's been in the ground. If I cut it off and graft a crab apple of some kind. Will it still be dwarf or semi dwarf? Also is it worth doing?
 
Well a foot of growth isnt bad for a tree that has only been in the ground a year. If you cut off the tree above the graft union the tree will still be what ever size (semi dwarf or dwarf) it was originally. Any tree is worth grafting if it gives you something else that you would rather have.
