I was doing some hinge cutting in a thicket 3 winters ago and hinged an old apple tree that I thought was beyond saving, I walked through there today and the tree has sent out a lot of new growth, and with perfect scaffolds!! I picked a few to keep and pruned off the rest and separated the hinge from the trunk. I can't wait to see what the apples are like.

Someone said you should cut the stump at an angle too.
 
Those old apple trees are tough to kill. My guess is you will have a nice tree there, with a great root system already in place. I'd be curious if the apples are better and more productive than what you were getting from the old tree.
 
It will be a surprise because i didn't even know the tree was there until the day i hinged it!
 
It does have great laterals!!!!! The only variety I have that looks like that naturally is Liberty.
