My little $0.02 is that my Cortland is much closer to the sweet end.
 
Mine also. I tasted my 1st Cortland's from my tree this year and really liked them.
My first year, too. Really good apple.

In apples, I have ones that tend to the sweeter side. I have a variety so I know their rating. They all get eaten.
 
Did this chart come from Stark? so many apples not on the chart, and I doubt Red D should be sweeter than Honey Crisp.

Store apple harvested for peak storage or when available to do so. Also, soil might be a bit devoid of certain minerals, even more so with irrigation and fertilizer injection.

Old school apples at home can be day and night.

I got atleast 1 apple from every tier. As long as you count galarina being a gala.
