Geese are easy to handle. Just cut up the middle of the breast, pull the skin back, and filet out the breasts. Then reach in under the skin and pull it down to expose the hip joint. Cut around the hip joint and pull the whole leg out, and cut it off below the drumstick. It only takes a couple minutes. I plucked and roasted one wild goose, and it was an abject failure. Now I do bbq pulled goose sandwiches with cole slaw.
 
That's pretty much how I do them, but I am the only one that eats them, so I hate to shoot one knowing it may go to waste. I would like to make burger or summer sausage out them at some point.

Summer sausage is good. I had one made with a lot of red wine and some spices. Burgers are good if you add some beef fat, and even some ground beef. I prefer to do them in a pan rather than on a grill. I season them liberally and add a flavorful cheese and sauteed onions and mushrooms in addition to the other fixins.

I do find goose to be inferior to duck and venison, unfortunately, so I do understand your lack of enthusiasm for shooting them. I haven't shot many waterfowl, so I'm still pretty eager to take every one I can.
 
Smoke your geese.... they are damn good that way. Otherwise they can be made into meat sticks as well (aka deer stick). Duck is good on the grill wrapped in bacon, just dont over cook it.
 
We make brats with geese spiced to taste.
Put a couple breasts in crock pot low&slow drain then ad Sweet Baby Rays and stir... ends up like pulled pork and make sandwiches with them.
Couple breasts in crock pot low with dry onion soup mix overnight serve over noodles, mashed potatoes or biscuits.
Cube up wrap in foil with onion/carrots/potato and a pat of butter bake low for a few hours in oven.
Young geese can be plucked or skinned and roasted I like it that way cold and sliced with swiss&mayo for sandwiches.
Number #1 way we do geese is grind them up with some bacon and make burger patties out of them.
 
My buddy and I had a good last hunt. 6 woodies and three merganzwer. Was a fun hunt in spitting rain.

finally got my mallard mount back a month or so back. Took two years but I think he did great work.

You can do both. They have a huuuuge freezer with so much stuff in there. Very good work.

Well, I was in the right area, just didn't finish the job. The first pair were a little high followed by a teal going the opposite direction. Second pair were smoking but I managed to sling some steal at them and saw a few feathers drop Next pair shot through before I could get on them, then had two sneak in from behind me. Got two shots off and saw feathers falling, just not the ducks.

Great morning to be out there and not bad for a last day of the season on public land.

For the first time in a while, I did not see a goose. As far as eating them, I have tried them baked, grilled, air fried, fried, smoked, cut into poppers a couple different ways and sliced into fajitas.

The poppers were both decent, but the best way was sliced for fajitas. I may need to try them in the crock pot if I ever decide to shoot another one.

I guess you would call it a cold smoke. Temperature is just hot enough to be safe. One of my buddies does all the geese for us. I am not sure on his exact method. I just know it is a homemade smoker, uses real wood for the entire process and smokes them a lot longer than I have ever smoked anything.

That's a great looking mallard! Fantastic work.

I sent a woody out to Birdman Studios probably 10 years ago or so. It came back great. Paid a little extra for an expedited return and it was worth it. Only took a few months. Not sure if he still does that. Waiting sucks!
