Tree Stand Soup

The other day, I was chatting with a friend about the upcoming deer season. One of the things he said he was looking forward to most was, sipping on some homemade soup during those all day sits. This blew my mind as I tend to be a very unhealthy snackers.

So over the past few days I researched a few soup ideas and came up with the following. And I must say, this is not only friendly for my restrictive diet...but the wife and kids equally enjoyed it! Bonus was, nearly everything came right out of our garden, too!


Tree Stand Soup (Keto/Gluten Free)

1 lb ground venison
½ lb ground venison sausage
2 onions finely chopped
1 red pepper finely chopped
1 green pepper finely chopped
½ cup carrot chopped
1 cup celery chopped
14 oz petite diced tomato with juices
12 cups beef broth (we did 8 cups, but will be doing more broth in the future)
1 cup green beans
3 cloves garlic minced
1 tsp sea salt
½ tsp black pepper
1 ½ tsp basil (for fresh basil 1.5 tbsp)
1 tsp thyme (for fresh 1 tbsp)
¾ tsp oregano (for fresh 2 ¼ tsp)
1 tsp parsley (for fresh 1 tbsp)
(Tabasco Sauce and Red Pepper Flakes as desired)
  • Wash veggies. Heat large soup pot with touch of oil. Add onion, red/green peppers, carrots, and celery when oil is hot. Cook until onions are translucent, stirring frequently
  • Add minced garlic and seasonings (salt, pepper, basil, thyme, oregano, and parsley) to onions and peppers. Add venison. Cook until venison is no longer pink.
  • Add tomatoes and green beans. Add beef broth.
  • Bring to a boil, reduce to a simmer and cook for 30 mins.
Estimate Nutrition Facts: 200 Calories, 6.5g Carbs, 2g Dietary Fiber, 3.3g Sugar, 23.8g Protein

Can add: Barley, Potatoes, or rice for non-keto friendly.
