Hello I am wanting to expand the amount of sugar maples on the property.

Where is a good source?

do deer feed on the seeds?

Cold Stream Farm in Michigan has sugar maple seedlings. I've purchased various seedlings from them over several years and their stock has always been good. I have an order from them coming in April.
 
Paint creek nursery. Not sure if they eat the seeds, but the trees definitely need protection.
 
We have a 40acre sugarbush in the family. Deer do not utilize the seeds that I can ever remember seeing. For syrup production more hard maples are great for deer I’d plant oaks or fruit trees. I’m curious why you want more hard maple?

Hard maple I e curly maple is very valuable. My wife loves the colors in fall. Sugar maples are not nearly as toxic to horses as red maple. I have seen carp eat the seeds but I read the deer do also due to how large they are
 
You would be lucky to get 2 curly hard maple on a 40 acre stand of maple trees,

As a fact of life / nature - red maple is MUCH more likely to show curly figure in its grain than hard maple. I've read about figured maple quite a bit due to my woodworking hobby / retirement play. Research figured maple online. I currently have a nice batch of curly red maple in my stash at my home. I got it for FREE from a township yard-waste dump site where tree trimmings and tree "waste" is ground into mulch. The crotch figure & curly figure in some of the "waste" is spectacular!!!!

I save all the hard maples on my place unless they are a cull tree or crowding an oak or black cherry. I'm sure deer eat the leaves and probably browse on young ones, but I wouldn't plant one specifically for deer. Red or as we call call them, soft maples, are a favorite of mine to hinge cut. I dropped a bunch just before this snow dropped and the deer are hitting them hard.
 
If your far enough south Scarlet Oak may be your tree of choice red fall colors and acorns for deer win win
 
What determines the curly factor in maples?

we have a few red maples but like I say we have mules so the red maples are a toxic concern.

I live in zone 5a and I have flood irrigation that lately is under pressure.

we have some sprinkler irrigation but not covering the whole farm.
 
We already have pin oaks on the property and my wife loves their fall color.

I will take your advice and try some scarlet oak, however the ph of my soil is about 7.3.

I've planted some northern red/shumard hybrids that have beautiful red fall color. Bought them from wildlife heritage tree nursery.

There is also a scholarly paper written by the Northern Research Station about Birdseye maple that is probably applicable to Curly maple as well
 
What determines the curly factor in maples?
I'm not qualified to give you accurate answers, but I've read that frequent flexing of the trees in windy locations causes a "ripple" effect in the grain of the wood. I think there are several reasons for the "curly" factor - now I'll have to do more reading on the subject!!!! I'm curious.
