Jerky

A cabelas slicer makes it alot easier,I use the Lem seasoning,just picked up a bag today with plans to have daughter get the rest of ingredients needed this evening but they didn't cooperate

It was. Dog got on the counter last night and polished it off. Probably some of the best I have ever made.
 
I accidentally thawed some sliced jerky meat this week, about a pound of it. Not wanting to make just a pound of jerky, I made another batch of ground jerky as well.

I also used some Amish seasoning for the sliced:


I've learned to pack the meat tighter on the trays. After a little drying there is lots of extra room.

John ... How are you slicing your venison, with the grain or against it?

What cuts of venison do you use?
 
We just set up a little canning kitchen in the basement for my wife. I've gotta get some jerky worked up. I've done better with an oven and drying racks than a cheap dehydrator. But that's just me.

I like cutting it too as opposed to hamburger.

One or two hours in the smoker outside, then I finish it in the oven. Way easier and better than a dehydrator imo. And it makes the house smell gooooooood.
