Grafting question regarding fruit buds on scion wood

Is there anything I can do with 2 grafts that only have fruit buds waking up? Seems I picked a Zestar scion that was all fruit buds. Can I make a cut above the fruit bud that has broken and hope I will get something to sprout off the cut? Maybe score the scion and hope a new bud will sprout? Any suggestions aside from waiting to bud graft or wait until next year?
