2nd year apple trees

I have 7 grafted apples trees planted from last year, when they bloom this spring should I be taking the flowers off so the tree and concentrate on development?

That is a good practice. You can strip the flower buds off now if there are any. Easy to do while pruning. No need to wait until they flower.
