What's for dinner?

Looks amazing! And when you’re done you can take your smoker down the trails at Moab
Lol, I put that cart together after 1 time too many of lugging the smoker around by hand. It's really pretty nice and has spots to put food and trays. Works out well.
 
I bought some new non stick pans (green pan). So far so good. Last night I made my last bag of fish in the freezer (crappies) . My new favorite recipe is just a little pink salt and then paprika. Then I fry them on medium heat in a little avocado oil. The sliced mushrooms also get cooked in a bit of avocado oil with a bit of pink salt. Spectacular way to fry up a couple panfish for yourself. Very little stink, and not such a bloated feeling from deep frying them. I could eat a whole platter by myself. Fry them skin side down until they are cooked all the way through before you try to flip them. Keeps them from curling and holds them together.

Was in Cairo, Egypt for 10 days cruising the Nile and seeing all the great sights. One of our meals was table top slow roasted lamb, chicken, & vegetables. Grilling is a way of life there. The pita bread, called eish baladi, went well with the dipping sauces ... lots of garlic, herbs, sour cream, humus.

The pita bread, called eish baladi, went well with the dipping sauces ... lots of garlic, herbs, sour cream, humus.

There's not a lot I miss about being in the Middle East, but the food is something I do. Heck yeah!
